Oysters with Cognac

Preparation
  1. Place a cup of water and a tablespoon of lemon juice in a pot. add salt and bring to a boil. Add the oysters, letting them cook over low heat until they are very soft. They are immediately removed, allowed to drain and set aside.

  2. In a saucepan, melt the butter and sauté the finely chopped onion, the sliced ​​mushrooms, leaving until tender. They are removed from the heat and the flour and pepper are added. It should be stirred gently so that no lumps form.

  3. Immediately add the milk with the cream or cream. Keep over low heat for a few minutes. Always stirring, add the grated cheese, stir well and remove from heat. Then add the hot cognac and light it so that the steam removes the alcohol from the cognac (be careful not to burn your face).

  4. Mix well for a few seconds and add the lemon juice, the chopped parsley and the oysters. Put the mixture in a bowl or a pan. Meanwhile, mix the breadcrumbs with the melted butter and sprinkle it over the oysters. Bake until well browned. Serve hot.
