Ingredients

  • 6 large oysters in the US or 2-3 large oysters in Ecuador fresh, open and with their juices

  • ¼ red onion or ½ paiteña onion cut into thin slices

  • 1 tomato, seeded and diced

  • ½ diced green sweet pepper

  • ½ tablespoon chopped coriander

  • The juice of 5 lemons

  • ½ tablespoon of oil

  • Salt to taste

  • Optional: Tomato sauce and mustard to taste according to your taste

Oyster Ceviche

Preparation

  • Soak the onion slices in a cup of cold water with a teaspoon of salt, rinse well, and sift. Cut the onions with the juice of 1 lemon.

  • Save the juice from the oysters and chop the oysters into small cubes.

.

  • In a medium bowl combine the chopped oysters, oyster juice, pickled onion, chopped tomato, chopped sweet pepper, juice from the remaining four lemons, chopped cilantro, oil, and salt to taste.

  • Marinate for 5-10 minutes maximum in the refrigerator and serve immediately.
